Situated on fertile volcanic soils, Ellis Wines began its life in 1999, when Bryan and Joy Ellis planted the very first vines. Strategically positioned to harness the natural environment, Ellis Wines planted its vines facing North to South, allowing the cool winds to lower the temperature, in turn producing succulent grapes that capture the perfect level of acidity. Until 2009 Ellis Wines sold its highly coveted produce to numerous wineries across the state of Victoria, before founding Ellis Wines as the brand which is recognised today.
Still family-owned and -operated more than twenty years since its inception, Ellis Wines’ empire has expanded from its initial 25-acres to an impressive 129-acres of land, with a yield of approximately 34-tonnes of wine each year. Paying homage to those who have contributed to making Ellis Wines what it is today, each subsequent plot of land added to Ellis Wines’ empire is named after one of its beloved family members. Primarily specialising in shiraz, but also merlot, cabernet sauvignon, rosé, viognier and moscato, Ellis Wines utilises its extensive experience and knowledge to produce exquisite wines across its large acreage.
The company’s ample experience in producing grapes of exceptional quality has allowed Ellis Wines to go from strength to strength. In addition to the myriad of prestigious awards and accolades the team has been awarded, Ellis Wines is also incredibly proud to be a 5-star rated winery in the 2021 Halliday Wine Companion, as well as placing in the Top 10 Dark Horse Wineries in the 2021 Halliday Wine Companion.

Tasked with the important role of manning the cellar door is Merlot, the beloved winery and cellar door cat – a favourite among visitors. Conveniently located in the heart of Bendigo, Ellis Wines boasts the only urban cellar door in region, and offers a selection of Ellis Wines’ revered vintages. ⇐2016 Premium Shiraz
A selection of impressive French Oak barrels is reserved for the premium label to create this stunning and elegant wine. The wine’s red garnet colours reflect its bright and polished flavours. With hints of chocolate on the nose, the palate has impeccably integrated notes of soft tannins and concentrated dark fruit flavours which lead into a long, balanced finish.
⇐ 2017 Signature Label Shiraz
Made with both old and new French and American oak, this Signature Label Shiraz is a deep red reminiscent of the ripe red berry aromas that appear alongside a hint of oak. A beautifully balanced wine, intense fruit flavours subside to delicate soft tannins on the front palate to create an uncomplicated, luscious tasting wine with a smooth, round finish.
⇐ 2020 Signature Label Rosé
This elegant rosé is abundant with vibrant aromatic notes of cherries, apricot blossom and musk. The palate is crisp and fresh, with flavours of strawberries and a long, creamy finish – perfect to share with friends on a summer’s day with antipasto and hors d’ouvres.
⇐ 2017 Signature Label Merlot
Produced from a small quantity of fruit, this merlot displays the classic characteristics of the style. The aroma of red plums, spicy French Oak, and some herbaceous notes perfectly complement the flavour of velvety soft fruit, carrying slight acidity on the front palate, which is undercut by pronounced tannin to produce a bold flavoured, well-balanced wine, with a mouth-filling finish.
