Paramoor is passionate about its wines, only releasing those it truly loves. The meticulously curated selection of premium wines is crafted to perfection for the discerning palate. Each wine is wild yeast fermented and aged in French oak, with a careful mixture of old and new barrels depending on the varietal. Situated 550m above sea level on loamy clay soils, the vineyard benefits from a significant diurnal range, which is fabulous for growing sensitive grapes like pinot noir.

Paramoor’s white wines include the vibrant zest of riesling, the elegant notes of pinot gris and the tropical allure of Verdelho. For red wine aficionados, the cellar boasts a captivating pinot noir, three distinctive shiraz expressions, and a commanding carbenet sauvignon. Paramoor is preparing to unveil new local varietals in 2025, including the sophisticated nuances of cabernet franc and the rich velvety textures of malbec.

The charming Clydesdale barn provides a unique backdrop for any occasion with its rustic allure. Paramoor specialises in hosting a wide range of functions, from intimate weddings to corporate events. In summer, Paramoor’s hospitality is extended outdoors with additional seating and umbrellas to allow guests to enjoy the beautiful weather. In winter, the roaring fires create a warm and inviting atmosphere. Paramoor offers cottage accommodation nestled in a picturesque farm setting, complete with a dam and small forest. The cottage is a quaint yet modern abode, with stunning views

Tasting Notes

Paramoor Pinot Gris

The nose is a mix of ripe Anjou pears, white peaches, and a hint of jasmine underpinned by lightly toasted almonds and a whisper of wet stone minerality. On the palate a profile of pears and white peach, complemented by nuances of honeysuckle and a touch of lemon zest. The cool climate influence is evident in the crisp acidity, which brings a refreshing brightness to the wine.

All elements of this wine work in perfect harmony. A vivid hue, accompanied by pretty aromas of rose petals, red cherries and subtle hints of sandalwood, spice and a discreet touch of minerality. On the palate, it feels beautifully structured with a sumptuous combination of redcurrant, red cherry and raspberry, with a hint of violet and a whisper of Moroccan spice. The result is a long, firm and juicy taste with mouthwatering red fruit acidity and fine-grained tannins.

This beautiful wine highlights the exceptional quality of fruits that impart remarkable complexity and distinction to Paramoor’s wines. After undergoing wild yeast fermentation, this wine matures gracefully for ten months in French oak and would benefit from cellaring for five to ten years.

Cabernet Sauvignon

Perfumed and expressive, this wine is delightfully complex, showcasing the exceptional quality of the fruit. After undergoing wild yeast fermentation, this wine is matured gracefully for ten months in French oak prior to bottling and would expect to further evolve beautifully until 2030 and beyond.
